From only one terroir, the highest and stoniest of the Domaine, this outstanding cuvée requires constant attention. Following manual sorting and total destalking, cold maceration precedes a long fermentation to allow the vineyard terroir aromas to emerge. 40-60% of the maturation takes place in wood, in 1-4 year old oak and gives the wines a very subtle roundness.
