The vineyard area is centred on the town of Chablis in the valley of the river Serein. The soil here has the most important effect on the wine. The best sites are situated on limestone with a layer of Kimmeridgian clay which is rich in marine fossils, lesser sites on Portlandian clay may bear the appellation Petit Chablis AC. Vineyards are planted along the contours of the slopes. Frost is the major problem for the region and heaters and sprinkler systems are used to circulate the air and prevent frost damage. Only the Chardonnay grape variety is permitted.
